BEETROOT, FETA AND ORANGE SALAD.
* 500 g cooked beetroot, sliced • * 2 oranges • * 150g feta, cubed • * 1/2 red onion, chopped • * 1 tbsp chopped chives • * Handful of spinach leaves Dressing • * 30 ml olive oil • * 1 tsp honey • * Salt and pepper Peel the oranges, making sure all the white pith is removed. Slice into thin rounds with a sharp knife, removing any pips, and arrange on a plate. Add beets, feta, onion and chives. Meanwhile, whisk olive oil with honey Season dressing to taste with salt and pepper. Combine with the vegetables and mix well. Top with spinach leaves.
