You can use the fruit or veggie setting on your dehydrator (125-135°)* for about 8 hours or set your oven to the lowest possible temp and check regularly. *Both temperatures work! Beets are really hardy so I use either setting because I normally dehydrate as many things as possible at once to conserve energy. 6.5K views · 240 reactions | Let’s preserve garlic! 🧄 There are many ways to remove the cloves from the paper, but I love the meditative nature of removing them by using the heel of my hand to break up the cloves, a paring knife to remove the tail end of the garlic and rolling in a silicone tube. Save the paper! 🧄 Paper: sort the offcuts and paper into three piles. Dry, clean paper to assemble into your garlic powder, off cuts and skin to save for stock, and roots and discolored paper to compost. 🧄 💨 Dehydrate: I dehydrate for both chunks and powder. Slice each clove in half (necessary- the skin tends to keep moisture in!) arrange them on dehydrator trays and dehydrate* at 135° for 12 hours or until the cloves snap in half. Pop the cloves and reserved paper into a food processor and process, periodically sifting the powder out. Reserve some chunks. Store in airtight containers. *This is one of the things that I don’t recommend to do in an oven. The temperature tends to be too high and the cloves brown too much. If you don’t have a dehydrator just move on to freezing! 🧄 🧊 Freezing: You can freeze garlic whole or minced! For measured ice cubes or whole cloves arrange them on a baking sheet let freeze overnight and then transfer to freezer safe containers. If you want to freeze a lot at once add minced garlic into a freezer safe bag (I love a @stasherbag ) pat down to even out and then use a chopstick to press cubes into the mince. This will allow for easy access later instead of having to chop at a whole block of garlic! 🧄 🌱 Pickled: Makes Two Pints 4 Cups Garlic Cloves 1 Cup White Vinegar 1 Cup Water 1 Tbs Salt 2 Tsp Black Peppercorns 1 Tsp Sugar 4 Sprigs of Dill 🫙Combine water, vinegar, salt, and sugar in a saucepan, bring to a boil and then simmer until the solids have dissolved. Fill each jar with garlic, a teaspoon of peppercorns, and dill. Pour brine over the top and seal. Let cool and then pop in the fridge for at least 72 hours before use. 1.3K views · 1.4K reactions | We're in the midst of food preservation, but we hate any waste - so let's make Apple Cider Vinegar with the cores from the apples we turned into applesauce 🍎 Add any apple scraps [bad spots, skins, cores, etc] to a jar, filling the jar about 3/4 of the way full. You can use fresh apples too, if you prefer! Top your jar off with water - makingsure to leave room for the sugar. For every 1 CUP of water, add 1 TABLESPOON of organic cane sugar. ***We also add a couple of splashes of our current batch of ACV that has the mother in, but that isn't absolutely needed. Give it a real good shake, cover with a cloth - that's thick enough to keep bugs out but still lets air in - and place on your counter. Daily, we give ours a stir for the first 1-2 weeks or however long it takes to form "the mother" - at that point you can stop stirring daily and just let it sit for another week or so before staining OR you can strain it, discard the cores while keeping the liquid and store it away until you plan to use it - waiting at least 6 weeks. If you’re canning plain sauce, jar it up. If you’re making marinara, tomato soup, pizza sauce, etc….you can use this as a base and add in your other ingredients!
