• 1 Drippings from the turkey

• 1 Garlic head
• 1 Lemon, zest of
• 2 Lemons
• 1 Onion
• 3 tbsp Parsley, fresh
• 3 tbsp Sage, fresh
• 2 tbsp Thyme, fresh
Baking & Spices
• 6 tbsp All-purpose flour
• 1 1/2 tsp Black pepper
• 3 tsp Kosher salt
• 1 Kosher salt and black pepper
Dairy
• 2 sticks Butter, unsalted
• 4 tbsp Butter, salted
Beer, Wine & Liquor
• 1 cup White wine
Other
• 1 (14-16) pound turkey, giblets and neck removed
• 1 piece Large of double lined cheesecloth
