So tasty and healthy pancakes (high protein) 🫐✨| fitfoodieselma | Ingredients: • 1 egg • 3/4 cup (lactose-free) Greek yogurt • (180 ml) • 1 tablespoon maple syrup • 1/2 teaspoon vanilla extract • 1/2 cup all purpose gluten-free flour mix (120 ml) • 1 1/2 teaspoons baking powder • 1/2 cup blueberries, fresh or frozen (I used frozen wild blueberries) 1. Mix the wet ingredients together • 2. Add the dry ingredients and stir to combine • 3. Fold in the blueberries • 4. Cook on a non stick skillet for a few minutes on each side • 5. Add your toppings and enjoy!

150g / 5.3 oz semi-sweet dark or milk chocolate 160g / 1.25 cups plain white flour 250g / 1.25 cups caster sugar ½ tsp salt 120g / 4.2 oz unsalted butter 1 tsp vanilla bean paste 120ml / 4 floz oat/ almond milk 60g / 2.1 oz cocoa powder Pre-heat your oven to 180°C/ 356°F. Line a 15cm square baking tray with baking paper and grease the sides with butter. In a saucepan, melt your butter on a low heat. Add your milk, sugar and vanilla. Combine then add the chocolate. Stir until the choc is melted. In a large bowl, sieve the flour, cocoa powder and salt. Combine. Pour the wet ingredients into the large bowl with the dry. Mix and pour the batter into the tray. Bake for approx 30 minutes, until the middle is still gooey but the edges are more baked.
