Grilled Jalapeño Poppers!! Okay, I didn't grill them, but they were AWESOME!! I added chopped scallions to the cream cheese, and boiled the halved, pitted jalapeños for about 5 minutes to soften them and take a bit of the edge off the spice. I baked them on a cooling rack placed on a baking sheet to allow the bacon to get crisp all around. I put them in a 400 degree oven for about 25 minutes (just keep an eye on them and pull them out when the bacon is crisp). SO YUMMY!!!

Once the coals are uniformly gray and ashy, loosely cover them with fresh rosemary branches (be careful not to burn your hands). Almost any meat or vegetable will benefit from this savory smoking.
