My chocolate used to crack! It was too thick! Oil would seep out of tiny holes in the cake pop. If this sounds familiar…. Keep Reading! 3 Most Common Mistakes When Making Cake Pops 1) Use the Right Chocolate. I used to buy white chocolate chips and add a neutral oil to thin it out. Now, I use Merckens chocolate melts (or Guittard) and microwave it in a mug in 30 second intervals. Mix the chocolate and microwave again for another 30 seconds. Do not microwave the chocolate for 1 min straight. You may risk burning the it. And with Merckens, no neutral oils or crystals are needed. Allow the melted chocolate to cool a little before dipping the cake dough. 2) Allow cake dough to come to room temperature prior to dipping in the melted chocolate. I used to stick my cake pop dough in the refrigerator or freezer to cool it faster. This wasn’t a smart move. But just allow the cake dough to come to room temperature to avoid the ‘hot’ chocolate cracking when you dip in the dough. Rule of thumb, cake dough and chocolate must be at room temperature to avoid any cracks on the cake pop. 3) Lastly, use BUTTER in your cake and NOT OIL. Oil will make the cake dough greasy. This will cause the oil to seep through the tiny holes in the cake pops and stain the cake pop stick. Butter will eventually solidify in the cake dough and help the cake pop firm when setting. Butter will not seep through the cake pop. That’s it! Don’t make these mistakes and you’ll have a wonderful smooth cake pop to enjoy! If you found this helpful, SHARE this Reel with a friend!
