A really good way to treat your parsnips and vvvv easy!

INGREDIENTS (makes enough for a big side):
- 8 to 10 parsnips, sliced thinly lengthwise. Chunky ones I’ll quarter or skinny ones I’ll halve.
- 50g or so salted butter 
- About 2 heaped teaspoons Chilli oil (I use @leekumkeeusa chiu chow)
- Quarter to half a cup maple syrup
- Olive oil 
- Salt 

METHOD:
- preheat oven to 180 fan
- Spread the parsnips out on a lined baking tray and season really well with olive oil and salt
- Roast in the oven for about 45 mins or until really golden and crunchy at the ends

This week, I share a decadent chocolate cake recipe to add a little extra sweetness to your week!

Ingredients:

- 200g softened butter 
- 250g real chocolate 
- 4 egg yolks 
- 4 egg whites 
- 1/2 cup milk 
- 2 tbsp flour 
- 2 tbsp corn starch 
- 200g sugar 
- 1 lemon 

Instructions: 

Mix the butter and chocolate, add egg yolks and milk, then fold in whipped egg whites, sugar, and a hint of lemon juice. 

Blend with flour and corn starch, pour into a baking tray, and bake for 50 minutes at 350°F. 

Once cooled, top with powdered sugar and a scoop of ice cream!

Save ✔️ and Share 📧 - 4 oz cream cheese, softened - 2 tbsp plain Greek yogurt - 1 ripe D'Anjou pear, peeled, cored, and diced - 1/2 tsp fresh lime zest - 1 tbsp honey - 1 tbsp butter, melted - 1/2 sleeve Ritz crackers - 2 slices Prosciutto, torn - extra honey and lime zest, for garnish Blend crackers, then add melted butter and pulse through until combined. Form the "crust" in a 6" mold, making sure to press it well. Let chill in the fridge for 15 minutes. Mix the cream cheese, yogurt, lime zest, and honey until well combined. Mix in diced pear. THE ULTIMATE CHEESY POTATO GRATIN

Ingredients for 4/6 people (28cm diameter pan):
2kg of potatoes 
2 large onions (the sweetest you can find)
200gr of smoked pancetta 
1/2 wine glass of White wine
40gr of Parmigiano reggiano
30ml of heavy cream
Mixed herbs (sage, thyme, rosemary)
Butter qb

Preparation:
Finely slice the onions and chop the pancetta into cubes. First, add the pancetta in the pan and let it cook for 5’. Then all the onions, cook for about 10’. Add few cubes of butter and all the Herbs. Deglaze with white wine and let it cook for 2 minutes.

Natalie Chassay on Instagram: "Never ceases to amaze me how pretty much anything doused in extra virgin olive oil, lemon juice, salt and loads of grated parm always ends up tasting so damn good. In this case, it’s very finely shaved fennel, wafer thin slices of pear and crunchy roasted walnuts all tossed together with the before-mentioned quad of deliciousness: olive oil, salt, lemon, Parmesan. Oh and actually I also added a whack of black pepper too! 

No specific recipe as such with this one but they key is to get the pear and fennel really fine. Always roast the nuts. Don’t hold back on any of the dressing elements and always taste to make sure it’s well balanced.
