Drain excess fat. Add the diced onion, green bell pepper, red bell pepper, and jalapeno pepper to the skillet. Cook until the vegetables are softened. Stir in the ketchup, Worcestershire sauce, Dijon mustard, chili powder, salt, and pepper. Simmer for a few minutes to let the flavors meld. Preheat the broiler in your oven. Transfer the sloppy joe mixture to an oven-safe dish. Top with shredded cheddar cheese. Place the dish under the broiler until the cheese is melted and bubbly.
