Quinoa & Veggie Stir-Fry  Ingredients: - 1 cup quinoa - 2 cups water - 1 tbsp olive oil - 1 onion, chopped - 2 garlic cloves, minced - 1 red bell pepper, sliced - 1 zucchini, sliced - 1 cup broccoli florets - 2 tbsp soy sauce (low-sodium) - Salt & pepper to taste - Lemon juice (optional)  Instructions: 1. Rinse quinoa. Boil water, add quinoa, simmer for 15 mins until fluffy. 2. Heat olive oil in a pan. Sauté onion & garlic until soft. 3. Add bell pepper, zucchini, and broccoli; cook for 5-7 mins. 4. Mix in cooked quinoa, soy sauce, salt, and pepper. 5. Stir well; cook for 2 mins. 6. Serve warm with a splash of lemon juice.  This dish is packed with protein, fiber, and vitamins for a healthy boost!
