Hearty Smoked Sausage and Potatoes Skillet
Ingredients: 1 lb smoked sausage, sliced into rounds 4 medium russet potatoes, diced 1 small onion, chopped 1 red bell pepper, chopped 2 cloves garlic, minced 2 tbsp olive oil 1 tsp smoked paprika ½ tsp garlic powder Salt and pepper to taste 2 tbsp fresh parsley, chopped (for garnish) Optional: shredded cheddar cheese or hot sauce for serving Instructions: Cook the Potatoes: Heat 1 tbsp olive oil in a large skillet over medium heat. Add diced potatoes, season with salt, pepper, smoked paprika, and garlic powder. Cook for 10-12 minutes until golden brown and tender. Remove and set aside. Cook the Sausage and Vegetables: In the same skillet, heat 1 tbsp olive oil. Add smoked sausage and cook for 3-4 minutes until browned.
