Cut garlic bulb’s top off, drizzle w/ olive oil, wrap in foil. Roast beets, garlic in oven 400*F 40 min. While veggies are roasting, cook pasta to package instructions. Open pkge vegan feta, drain excess water, slice feta into cubes. Once beets have cooked, peel off skin. In food processor, add roasted beets, squeeze out bulbs of garlic, add chopped feta, olive oil, lemon juice, and some starchy water from cooked pasta. Blend everything until super smooth, creamy.
