Vegan Spicy Tuna Roll with Chickpea Tuna
Ingredients For the Spicy Tuna 1 can chickpeas 1/2 cup chopped pickles 1/2 diced red onion 2 tbsp chopped capers 2 tsp sriracha 2 tbsp vegan mayo 1 lemon juice 2 nori sheets shredded For the Rolls 4 cups cooked sushi rice 8 nori sheets 3 tomatoes sliced 2 avocados 2 tbsp sesame seeds Try dunking in my Healthy Cashew Sriracha Mayo Instructions First, make your chickpea tuna. Finely chop your pickles, onion, and capers and add them into a shallow dish along with the rest of your chickpea tuna ingredients. Use a fork to mash the chickpeas together with the rest of your ingredients. Cook your sushi rice according to the package directions, then let it cool to room temperature. If you are in a rush, you can spread the rice out on a plate and place it in the fridge. By @That.veganbabe
