Fried Ravioli
Fried Ravioli: Oil, 1 cup breadcrumbs, 1/2c shredded parmesan, 1tsp garlic powder, dash of salt, 2 eggs, beaten, 1 pack frozen cheese ravioli. Heat oil over medium-high heat. Combine bread crumbs, cheese, garlic powder and salt in a shallow dish. Dip ravioli in beaten eggs; dredge in bread crumbs, shaking off excess. Fry ravioli, about 10 at a time 20-30'' or until golden. Remove and drain on paper towels. Serve with marinara sauce for dipping. X

Pepperoni Pizza Puffs: 3/4 cup flour, 3/4 tsp baking powder, 3/4 cup whole milk, 1 egg lightly beaten, 1 cup cheese shredded, 1 cup pepperoni in cubes, 1/2 cup pizza sauce, 2 tabsp chopped fresh basil, 1 red bell pepper sliced. Whisk together flour, baking powder then milk & egg. Stir in mozzarella & pepp. Let stand x10'. Stir and divide among mini-muffin cups. Bake until puffed and golden, 20-25'. Microwave pizza sauce until warmed, stir in 1 tsp basil. Sprinkle puffs with basil & red pepper. X
Crab Puffs
Crab Puffs: Bring 1c water, 1/2c butter & salt to a boil. Add 1c flour all at once & stir until smooth ball forms. Remove from heat; let sit 5'. Add 4eggs, 1 by 1 beating well until smooth & shiny. Bake by tsps 20' until golden. Split open, remove tops, discard inside dough, cool. Combine 4 hard-cooked eggs, chopped 1c crabmeat, 4oz cream cheese 1/4c mayo 2 tbsp finely chopped onion, minced parsley. Just before serving, spoon 1 tsp filling into each puff; sprinkle with parsley, re-place tops. X

Garlic Mushrooms: Heat 2tbs butter and 1tbs olive oil over med heat. Once melted add 3 minced garlic cloves, stirring frequently, until it turns golden, 30'' to 1'. Stir in 1/4c red wine and return mixture simmer. Add in 400g mushrooms and toss to coat with sauce. Cover and simmer on med-low 15'. Season and continue cooking for an additional 5-8 minutes, until mushrooms are cooked through and the bottoms are golden. Drizzle with lemon juice and sprinkle parsley over the top. X

Pinwheel Tortilla hors d’oeuvres: 1 pkg of 10″ tortillas, 8 oz (1 cup) sour cream, 8 oz cream cheese, 4 oz chopped, mild green chili peppers, 4 oz chopped black olives, 2 pkgs Budding thin sliced meat (ham or beef), small onion, chopped, 1/2 tsp garlic powder, 1/2 tsp onion salt. Mix all ingredients, spread on tortillas, roll up, refrigerate overnight, slice in 1 inch pinwheels before serving. X
