Baked Cottage Cheese Eggs
Ingredients: 1 cup cottage cheese 4 large eggs 1/2 cup shredded cheese 1/4 cup chopped green onions (optional) Salt and pepper to taste Optional: diced bell peppers, spinach, tomatoes Instructions: 1. Preheat oven to 375°F. 2. Grease 8x8 inch baking dish. 3. Mix cottage cheese, eggs, shredded cheese, and green onions. 4. Pour into dish and bake 25-30 minutes. 5. Cool, cut into squares, and serve warm.
