Street Corn Chicken Rice Bowl: Flavor-Packed & Easy
Ingredients: 1 lb boneless, skinless chicken breasts (bite-sized pieces), 1 tbsp olive oil, 1 tsp smoked paprika, ½ tsp cumin, ½ tsp garlic powder, ½ tsp onion powder, ½ tsp chili powder, salt & pepper to taste, juice of 1 lime, 2 cups corn kernels, ¼ cup mayonnaise, 2 tbsp sour cream, ¼ cup crumbled cotija or feta, juice of ½ lime, ¼ cup chopped cilantro, 2 cups cooked rice, ½ red onion (finely chopped), 1 jalapeño (sliced, optional), 1 avocado (diced). Instructions: Mix chicken with olive oil, spices, and lime juice. Cook in a skillet until fully cooked. In a separate bowl, combine corn, mayo, sour cream, cotija or feta, lime juice, cilantro, and spices. Assemble bowls with rice, cooked chicken, and corn mixture. Top with red onion, jalapeño, and diced avocado.
